The Pays de la Loire region makes much of its coast and many rivers in its cuisine: “chaudrée” is the Vendeen equivalent of the mediterranean “bouillabaisse”; while another fishy speciality of the region is the “cotriade”; a fragrant mix of fish, potatoes and onions.
